ULMA Packaging has signed a sponsorship agreement with the prestigious Basque Culinary Center to equip its facilities with a traysealer Smart 300.

This model of machine is especially designed to package prepared and pre-cooked meals. It is equipped to perform MAP (controlled atmosphere) packaging so that packaged meals can retain all their aroma and flavour with the required quality until consumed.

It also includes a liquid separation system, allowing the meals to include sauces and/or liquids without them affecting the package’s watertightness.

The Basque Culinary Center R&D is the associated R&D Center for the Faculty of Gastronomic Sciences and Culinary Arts and this center promotes and conducts research projects, agreements or contracts in the hotel, restaurant and food sector.

This is where the ULMA traysealer plays a key role in researching how different cooked meals can stay fresh for the required period. Different combinations of meals with different combinations of post-sealing treatments will be tested to see how they affect the dishes’ useful lives.

The machine is equipped with two different models:

  • Regular gastronorm trays (325 x 285 x 85 mm). This type of sealed tray for the hospitality sector is designed for several portions.
  • Single portion trays (130 x 170 x 35) designed for retail and made of polypropylene (PP/EVOPP) so they can be heated in a microwave.
